Gluten Free Apple Cider Muffins

Note: These can either be used as muffins or as a cupcake with frosting. The recipe can also be turned into mini muffins with a mini muffin tin. Perfect for holiday parties or school parties!

Ingredients

  • 3/4 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup white granulated sugar
  • 1/2 cup light brown sugar
  • 1 3/4 cup GF 1:1 Baking Flour (We used Bobs Redmill)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

    Topping: (OPTIONAL)

  • 1/4 cup butter, melted (DF alternate is what we used)
  • 1/2 cup white granulated sugar
  • 2 teaspoon cinnamon

    Directions

    Pre Time 10 Minutes    Cook Time 18 Minutes     Total Time 28 minutes

  1. Preheat oven to 350°F. Spray a mini muffin tin with non-stick cooking spray or grease with butter.
  2. In a mixer, combine apple cider, vanilla and egg. Beat until well combined.
  3. Add remaining ingredients (except toppings). Stir until just combined.
  4. Add mixture to mini muffin tin or regular cupcake tin.
  5. Bake for 15-18 minutes or until golden brown.
  6. For the topping: add melted butter to one bowl and the 1/2 cup of sugar and 2 teaspoons of cinnamon to another bowl.
  7. Once muffins are baked, but still warm, dip each muffin into the melted butter, then into the sugar/cinnamon mixture.
