Gluten Free Apple Cider Muffins
Note: These can either be used as muffins or as a cupcake with frosting. The recipe can also be turned into mini muffins with a mini muffin tin. Perfect for holiday parties or school parties!
Ingredients
- 3/4 cup apple cider
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup white granulated sugar
- 1/2 cup light brown sugar
- 1 3/4 cup GF 1:1 Baking Flour (We used Bobs Redmill)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Topping: (OPTIONAL)
- 1/4 cup butter, melted (DF alternate is what we used)
- 1/2 cup white granulated sugar
- 2 teaspoon cinnamon
Directions
Pre Time 10 Minutes Cook Time 18 Minutes Total Time 28 minutes
- Preheat oven to 350°F. Spray a mini muffin tin with non-stick cooking spray or grease with butter.
- In a mixer, combine apple cider, vanilla and egg. Beat until well combined.
- Add remaining ingredients (except toppings). Stir until just combined.
- Add mixture to mini muffin tin or regular cupcake tin.
- Bake for 15-18 minutes or until golden brown.
- For the topping: add melted butter to one bowl and the 1/2 cup of sugar and 2 teaspoons of cinnamon to another bowl.
- Once muffins are baked, but still warm, dip each muffin into the melted butter, then into the sugar/cinnamon mixture.
