Summer may be over but it still really warm outside. This is a refreshing salad to enjoy on it’s own or before a meal.
Ingredients:
• 1 – 8 pound seedless watermelon (cut into cubes)
• 1 cup of fresh watercress
• ½ pound of feta cheese
• ½ cup of fresh mint leaves
• ¼ cup of fresh chopped basil leaves
• ½ teaspoon of cayenne pepper
• 1 teaspoon of sea salt
• ½ small sweet onion cut into small diced pieces
• 1/3 cup of avocado oil
• 3 tablespoons fresh lemon juice
Directions
1. In a large bowl, whisk avocado oil, lemon juice, sea salt, pepper, watercress, onion, and basil.
2. Add watermelon and feta.
3. Mix all the ingredients.
3. Garnish with mint and serve.
