Lander Chiropractic Weekly Recipe (9/25/2017): Creamy Garlic Chicken & Sweet Potato Noodles

Note: To create this type of vegetable noodle, please use a spiralizer.  Amazon sells these for as low as $15 dollars. The spiralizer allows you to have a choice of the size of noodle and it takes less than 5 minutes to make your own noodles. Initially, we tried different ways to create noodles and wound up having disastrous results from less than tasty noodles to lack of consistency to injuries – TRUE STORY. Save yourself the hassle and learn from our mistakes.

Ingredients
4 large sweet potatoes (peeled)
2 garlic cloves – chopped into pieces
1 cup of grape tomatoes (cut into halves)
1 cup of cup of fresh basil
1 shaved Parmesan cheese
¼ grated Asiago cheese
1 pieces of boneless chicken – cut into chunks (leave out if you prefer vegetarian dish)
2 sticks of butter
1 teaspoon Mediterranean sea salt
Pinch Himalayan sea salt
1 teaspoon of tapioca flour
1 teaspoon of oregano
½ tablespoon cayenne pepper
½ cup of heavy cream
½ cup extra virgin olive oil (EVOO)

Directions

Preheat oven to 325 degrees.
Create sweet potato noodles using spiralizer and place in mixing bowl
Using ¼ cup EVOO – marinate sweet potato noodles
Add oregano, Asiago cheese, and Himalayan sea salt and set aside
Marinate chunks of chicken with remaining EVOO, garlic, tomatoes, cayenne pepper, &
Mediterranean sea salt.
In a medium heated pan – add one stick of butter and allow it to melt.
Sautee chicken for up to15 minutes or until chicken is cooked.
Add heavy cream and flour to chicken and cook on low for another 5 minutes.
In separate pan, melt butter.
Add sweet potato noodles to the pan noted above.
Cook for only 3-4 minutes and remove from heat.
In a baking dish, combine noodles and creamy chicken marinade.
Bake for 15 minutes.
When you are ready to eat, add fresh basil and shaved Parmesan cheese.
