Ingredients
– 2 fresh corn cobs (remove kernels) or 1 pack of frozen corn
– ½ cabbage head (thinly sliced)
– 4 carrots (diced)
– 2 tablespoons cumin
– ½ teaspoon chili powder
– ½ teaspoon of tarragon
– 1.5 teaspoon salt
– 2 cloves of crushed garlic
– ½ stick of butter
Directions
– Add ¼ stick of butter in medium saute pan using medium heat
– Add carrots, cumin, salt – allow to cook for 5-7 minutes until carrots are lightly brown and soft
– Add corn, cabbage, remaining butter, chili powder, and tarragon – mix evenly with carrots
– Add garlic to pan and mix with rest of ingredients – allow to cook for an additional 2-3 minutes
– Remove all ingredients and add to a mixing bowl and allow to cool before serving
– Add your favorite dressing – we use Dr. A’s garlic ranch dressing
