Note: I love this recipe and so glad that I was able to come up with something that had no nightshades in them (tomatoes, white potatoes, chilis, peppers, etc) but still reminded me of pasta sauce. Nightshades can cause inflammation in your joints and body leading to other symptoms. This sauce can be used as a substitute for tomato sauce. We have used it in Goulash, Soups, over pasta and zoodles, and with lasagna. You can add any protein you want to it as well.
Ingredients
2 cups of peeled red beets
2 cups of chopped carrots
1 cup of pureed butternut squash or pumpkin (we use canned)
1 cup of chicken broth
2 tbsp of Nutritional Yeast for a cheesy earthy flavor
1/2 tsp of oregano
1/2 tsp of basil
Salt and Black Pepper to taste
Prep Time- 15 Mins
Cook Time- 20 Mins
Total Time- 35 Mins
Directions
Add all ingredients to pot (instant pot can also be used).
Bring to a boil and then turn heat down to a medium to low heat. Put on lid.
Continue to cook until beets and carrots are tender.
Let sauce cool for a short time and then place in blender or use an immersion blender to blend together.
If sauce is to thick you can add more chicken broth. This is also a good time to add more seasonings.
Serve with any of the suggestions above!
