Ingredients

• 1 large cauliflower head – should make approximately 4 cups

• 2 large eggs

• 2 cups of shredded mozzarella cheese

• 1/4 stick of butter

• 1 teaspoon of sea salt

• 1 teaspoon of dried basil

• 1 teaspoon of dried oregano

• 1/3 cup of tapioca flour

• 1/2 cup of fresh basil

• 2 tablespoons of ghee

• 6-10 slices cut into strips of fresh mozzarella – depending on the size of your pizza pan

• additional cheese – 1/4 cup – we used Asiago cheese – shredded

• 1/2 cup of tomato sauce (home made or store bought)

• 1/2 cup shredded parmesan cheese

• 1/2 pound of ground turkey – should be pre-cooked to 75% before adding to pizza

 

Prep Time – 30 minutes

Cook Time – 50 minutes

Total Time – 80 minutes

 

Directions

• Using a food processor, shred cauliflower until it crumbles

• In a saucepan, cook cauliflower until it is lightly golden – add butter and sea salt

• Mix eggs and flour and add to saucepan

• Add shredded 1/4 of mozzarella cheese, oregano, and basil – then cook for five minutes

• Preheat oven to 450 degrees

• Coat round pizza pan with ghee

• Remove ingredients from saucepan & place on a pizza tray – be sure to spread mixture evenly

across pizza pan

• Place strips of fresh mozzarella around (and inside) the pizza pan with the cauliflower mixture to

create a crust. Be sure not to place cheese over the pan or it will melt outside the pan and drip

into oven.

• Cook for 15 minutes

• Once cooked, allow to cool for 20 minutes before placing in oven again.

• Add tomato sauce, fresh basil, and slices of mozzarella to the pizza (at this time you can also

add meat if you are including protein)

• Cook for an additional 10 minutes

• Remove from stove and allow to cool

• Add shredded cheese

Notes:

This is a great dish to meal prep as it tastes just as delicious if you freeze it and have it a few days

or a week later!
