Note: You can use any protein and veggies you would like in the fried rice dish or you can change up the proteins you use to make the meatballs. Very interchangeable recipe! You can use the meatballs with pasta and red sauce or in sandwiches as well, etc.

 

Ingredients

Meatballs

1 lb of ground pork

1 lb of ground beef

2 eggs

¼ cup of diced green onions

Salt

Pepper

Ground onion

Ground ginger

Ground garlic

Cauliflower Fried Rice

1 bag of frozen or fresh riced Cauliflower

1 cup of diced zucchini

1 cup of diced mushrooms

1 cup of broccoli

½ cup of coconut aminos

 

Prep Time – 15-20 Mins

Cook Time- 20-25 Mins

Total Time – 45-50 Mins

 

Directions

Meatballs: Preheat oven to 375 degrees. In a large bowl, mix all ingredients for the meatballs together until well combined. Roll out meatballs the size of a golf ball or whatever sizes you would like. Next line your cookie sheet with foil and place a wire baking rack on top. Lay out the meatballs about 1in apart. Cook in oven for 20-25 minutes, turning them once throughout the time.

Cauliflower: In a sauté pan heat up a little oil (olive/avocado/etc) and add in all veggies. Let them soften and sauté, stirring regularly. Next add in coconut aminos and add until you like the taste. The coconut aminos gives it a soy sauce taste without the soy product. If you do not have coconut aminos you can use soy sauce as a replacement.

 

Once both items have been completed serve and enjoy!!
