Ingredients
- 3 cups cauliflower rice
- 1 cup cheddar cheese (shredded)
- ¼ cup almond flour
- 1 teaspoon baking powder
- 7 slices baking, cooked & chopped (recommend nitrate-free)
- 1 tablespoon garlic powder
- 1 tablespoon parsley
- 1 tablespoon oregano
- 1 tablespoon paprika
- 2 large eggs
- ¼ cup crumbled feta cheese
- Salt & pepper to taste
Prep Time- 20 minutes
Cook Time- 35 minutes
Total Time- 55 minutes
Directions
- Preheat oven to 350 degrees
- Combine all dry ingredients, including cauliflower rice, bacon and cheese into a large bowl
- Add eggs (2) and mix thoroughly until the mixture can be pressed down with a spoon and it holds its form
- Utilizing muffin tins or muffin cups, spoon mixture into each muffin cup.
- Top with feta cheese
- Bake for 35 minutes (350 degrees)
- Remove from oven and allow to cool
Notes:
These muffins are great for saving time during the week. We like to make them Sunday and have a quick and easy savory snake whenever needed.
