Ingredients

  • 3 cups cauliflower rice
  • 1 cup cheddar cheese (shredded)
  • ¼ cup almond flour
  • 1 teaspoon baking powder
  • 7 slices baking, cooked & chopped (recommend nitrate-free)
  • 1 tablespoon garlic powder
  • 1 tablespoon parsley
  • 1 tablespoon oregano
  • 1 tablespoon paprika
  • 2 large eggs
  • ¼ cup crumbled feta cheese
  • Salt & pepper to taste

Prep Time- 20 minutes

Cook Time- 35 minutes

Total Time- 55 minutes

Directions

  • Preheat oven to 350 degrees
  • Combine all dry ingredients, including cauliflower rice, bacon and cheese into a large bowl
  • Add eggs (2) and mix thoroughly until the mixture can be pressed down with a spoon and it holds its form
  • Utilizing muffin tins or muffin cups, spoon mixture into each muffin cup.
  • Top with feta cheese
  • Bake for 35 minutes (350 degrees)
  • Remove from oven and allow to cool

These muffins are great for saving time during the week. We like to make them Sunday and have a quick and easy savory snake whenever needed.
