Maple Pumpkin Spice Donuts
Note: Best part about these donuts is that they are baked and not fried! You can change the frosting and toppings to suit your taste buds.
Ingredients:
Pumpkin Donuts
¾ cup of Sugar
½ cup of Olive Oil
1 egg
1 cup of pumpkin puree
2 teaspoons of vanilla
1 ½ cups of gluten-free flour blend or regular all purpose flour
2 teaspoons pumpkin pie spice
½ teaspoon of cinnamon
1 teaspoon of baking powder
½ teaspoon of baking soda
½ teaspoon of salt
Maple Cinnamon Glaze
2 Tbsp of warm water
¼ teaspoon of cinnamon
1 cup of powdered sugar
2 Tbsp of maple syrup

Directions
Preheat oven to 425 degrees. Spray silicone/metal donut mold with cooking spray or wipe with oil.
In large bowl mix sugar, oil, egg, and vanilla together. Then add pumpkin puree until fully incorporated. Next add in flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt, mix until combined.
Spoon or pipe batter into the donut pan, filling just the to rim of each mold. Bake donuts at 425 for 5 mins and then lower temp to 350 for 10 min or until risen and cooked through.
Remove from oven and cool for a few minutes before moving to wire rack.
While the donuts are baking, you will need to start the glaze. Place all glaze ingredients into a small sauce pan and cook on low-medium for a few minutes until incorporated and melted down to a thick sauce.
Once donuts are cool dip them in sauce and let cool down either on wire rack or in the fridge. Feel free to dip them once more for a thicker coating once the initial layer is cooled and starting to harden. Sprinkle with sugar, sprinkles, nuts, etc.!
