Deconstructed Loaded Quiche

After the sugar-loaded holidays, we wanted to take a step back to eating foods that were loaded with nutrients and flavor and minimal sugar. This dish has lots of steps but it is LOADED with flavor!!! It is great for breakfast, lunch, and/or dinner.

Ingredients

4 eggs
1/2 cup ground meat (we use pork – for vegetarian option – please omit meat) 1 turkey sausage – should be cut into small pieces
1 pieces of bacon
1.5 cups Israeli couscous
1⁄2 tablespoon of sea salt
1⁄2 tablespoon cayenne pepper
1⁄2 tablespoon thyme
1⁄2 tablespoon paprika
1 tablespoon crushed basil
1/3 cup coconut flour
1⁄2 cup heavy cream
1 stick of butter
3 peppers (diced) – we chose green, yellow, red1
1 yellow pepper
1 red pepper
1⁄2 onion – diced
2 cups of shredded cheddar cheese
1 cup of shredded Parmesan cheese

Prep Time: 20 Minutes

Cook Time: 30 Minutes

Total Time: 50 Minutes

Directions

Preheat oven to 350 degrees Israeli Couscous instructions:

  • Boil 3 cups of water (add pinch of sea salt & 1/3 stick butter)
  • Add couscous and allow to boil for 10 minutes (you will know it is done when couscous is

    fluffy and has consumed the water)
    Using a skillet, brown ground meat (season with paprika and thyme) until it is 50% cooked (approximately 3 minutes) and set aside
    Place couscous and turkey meat in baking tray
    Sautee sausage, diced peppers & onion, bacon with cayenne pepper and salt & add to baking tray Mix eggs, heavy cream, basil, sea salt, coconut flour, and butter.
    Add cheddar cheese and mix.
    Pour egg mixture onto baking tray – try to pour evenly but leave space
    Place in oven
    Once you take the tray out of the oven, add Parmesan cheese
