Note: We are in the middle of fall season – time to boost up our immune system. What better way
than to create a dish with lots of super foods. These are types of foods that are high in healthy fats.
1/3 cup organic whey protein
6 beets (peeled)
1 cup coconut oil
½ cup shitake mushrooms
1 chopped purple onion
1 clove garlic
1 spoon turmeric
1/3 cup organic bone broth
1 cup shredded mozzarella cheese
1 cup cauliflower
2 tablespoons ghee
½ cup fresh rosemary
1 tablespoon extra virgin olive oil (EVOO)
Pinch cayenne pepper
1 cup cherry tomatoes (sliced in half)
Protein – recommended grass fed beef or wild Alaskan Salmon
Tablespoon Mediterranean sea salt

20 minutes 45 Minutes 65 minutes
Preheat oven to 350 degrees
Marinate beets with EVOO & cayenne pepper for 20 minutes
In mixing bowl – add mushrooms, whey protein, tomatoes, onions, garlic, turmeric, bone broth,
cauliflower, and rosemary and mix.
Sautee protein with coconut oil and sea salt for 3-5 minutes (3 minutes for fish and 5 for meat).
Add protein to large baking tray.
Sautee mixture from mixing bowl for 2 minutes on medium heat, then add to mixing tray.
After 20 minutes, remove beets from oven and chop into small pieces. Then add to baking tray.
Bake for 20 minutes.
Mix mozzarella cheese with food on baking tray.
Bake for additional 5 minutes.
Allow to cool and enjoy.
We eat this dish with slices of avocado.
