Pork Tacos & Pickled Onions
Ingredients
1 half onion – sliced into thin pieces
½ cup white wine vinegar
2 tablespoons of sugar 1 lime
½ cup white wine vinegar
1 tablespoon sugar
1/4 cup chicken stock
1 pound ground pork
1 tablespoon of cumin
1 tablespoon of celery seed
1 tablespoon of cayenne pepper
1 tablespoon garlic powder
¼ cup tomato paste
½ cup fresh cilantro
1 cup sour cream
½ poblano pepper – deseeded and cut into small pieces
1 Roma tomato – cut into small pieces
Flour tortillas
Salt & pepper to taste
Prep Time:5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Directions
• In a medium bowl, combine onion slices, sugar, & vinegar. Then add a pinch of salt and pepper. Set aside
• Add lime to sour cream – add salt & pepper to taste. Mix well then place in fridge. • Season pork with cumin, celery seed, cayenne pepper, and garlic powder
. • In large skillet – warm with drizzle of olive oil and chicken stock.
• Add ground pork and tomato paste. Be sure to mix well as you cook the meat.
• Add salt and pepper and stir for up to 4-6 minutes.
• Be sure to break meat up to allow it to cook thoroughly.
• Warm tortillas
• Remove sour cream from fridge.
• Create your tacos by adding all the ingredients from above and add fresh cilantro!
