Cucumber Salad & Tzatziki Sauce


1 cucumber– grated

1 cucumber- sliced

2 shallots – diced

½ teaspoon sugar

½ cup vinega

r ½ cup sour cream

1 cup fresh dill

2 cloves of fresh garlic – minced

½ cup chia seed oil

Black pepper and Himalayan sea salt – to taste

Prep Time: 10 minutes

Total Time: 10 minutes


In a bowl – place sliced cucumber, shallots, vinegar, sugar, ¼ oil and mix well.

In separate bowl – place grated cucumber, sour cream, dill, garlic, 1 teaspoon of water, salt, & pepper and remaining chia seed oil to create Tzatziki sauce.

Tips: We used Tzatziki sauce as dressing for the cucumber salad and as a topping for chicken souvlaki from last week’s recipe.
