Note: This recipe is super easy to increase or decrease it by how many servings you need, just play around with the amount of Spinach and Kale you use as well as season to taste and liking. *Nutritional Yeast provides a naturally cheesy taste but without the use of dairy. No sodium, no cholesterol, and is a great alternative for vegans and vegetarians because it is a natural source of B-complex vitamins.
Ingredients
3 Cups of raw Spinach
1 Cup of raw Kale
½ Cup of diced yellow onions
2 tablespoons of minced garlic
4-6 Slices of bacon
1 (13.5oz) can of Full Fate Coconut Milk
1 tablespoon of nutritional yeast
Himalayan Sea Salt (to taste)
black pepper (to taste)
Prep Time: 10 minutes
Cook Time: 15 Minutes
Total Time: 25 minutes
Directions
Cook bacon slices in sauté pan (you can use however many you would like, I used the amount above)
Once bacon is cooked, pour out most of the bacon grease.
Using same pan – sauté onions and minced garlic (Sauté until lightly browned and fragrant)
Add in spinach and kale to mixture.
Cook down until wilted (approximately 3-5 minute)
Next add in whole can of coconut milk to mixture. If you increased of decreased amount of greens adjust the amount of coconut milk you used. Having more liquid is not a problem with this recipe, it just means its even creamier!
Add bacon diced up into little pieces
Add nutritional yeast, salt and pepper. (*See note above about nutritional yeast)
Let mixture simmer down on medium to low for approximately 10 minutes to let the liquid soak into the greens. The longer you let this sit it becomes creamier.
