Chocolate Avocado Banana Bread

Note: For this recipe we used cacao, it tastes just like cocoa but cacao is a super food that contains antioxidants and can help improve a number of different health issues.We have also used Cassava (Yuca Root) flour when making this recipe and it turned out fantastic as well.

Ingredients

1 Cup of Bob’s Redmill 1 to 1 Gluten Free Flour
1⁄4 Cup of Cacao or Unsweetened Cocoa Powder
3⁄4 Cup or Coconut Sugar or Maple Sugar (you can use White sugar as well) 1 tsp of Baking Soda
1 tsp Cinnamon
1⁄2 Medium Ripe Avocado Cubed
1 large Egg
2 large ripe Bananas Sliced
1 tsp of Vanilla
1/3 cup of Mini Chocolate Chips

Directions

Preheat oven to 350 degrees.
Grease pan with coconut oil/avocado oil/olive oil and set aside.
In blender add avocado cubed, egg, vanilla, and sliced bananas. Blend until smooth.
Add in flour, cacao or cocoa, sugar, baking soda, and cinnamon. Blend until smooth. Use a spatula to scrape sides and bottom to make sure all is mixed.
Next pour egg mixture over veggies until it fills the entire dish, may need to mix it around a bit so its even.
Pour into loaf pan, and sprinkle chocolate chips on top of loaf.
Bake at 350 degrees for 50 mins or until you can pull a toothpick out of it clean.
Allow bread to cool before slicing.
