Garlic Chicken Rice
Ingredients
• 1 ½ cup jasmine rice
• 3 ½ cups chicken stock
• 2 tablespoons turmeric
• ½ cup fresh cilantro
• 2 cherry tomatoes – diced
• 4 cloves garlic – slice into small pieces
• 1 jalapeno pepper – small & de-seeded
• 1 red onion – sliced into large pieces
• 2 lemons • 2 tablespoons cumin
• 2 boneless skinless chicken breasts – cut into strips
• 2 tablespoons Himalayan sea salt
• 1 tablespoon black pepper
• 4 tablespoons butter
• 2 tablespoons olive oil
• 2 lemons
Prep Time: 10 minutes
Cook Time :35 minutes
Total Time: 45 minutes
Directions
Preheat oven to 350 degrees In a small pot – combine 3 cups chicken stock, rice, turmeric, half sea salt, & 2 tablespoons of butter and bring to a boil
Once boiling – bring to a low simmer and allow to cook until rice is tender Marinade jalapeno pepper & onions, & tomatoes with olive oil, pinch of cumin, and pepper Place veggies (from above step) in oven for 10 minutes
Heat large skillet with olive oil and pinch of pepper
Add boneless chicken – sprinkle salt and cumin
Add tablespoon of butter and garlic
Add ½ cup of chicken stock – allow to cook until chicken stock is absorbed by chicken
Add chicken to rice and mix Add chicken, rice, and veggies to a large tray and allow to bake for 10 minutes
In separate bowl – combine diced tomato, drizzle of olive oil, lemon juice from 2 lemons, salt & pepper Once dish is baked – allow to cool for a few minutes and then garnish with fresh tomato salsa
