Coconut Cornbread
Ingredients:
2 large eggs
2 cups cornmeal
1 ounce cream cheese
2 cups coconut flour
20 drops of Stevia
4 teaspoons baking powder
1 cup coconut milk
1 cup shredded coconut
1/2 cup melted butter
1 tablespoon sea salt
Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Directions
Preheat oven to 425 degrees
In a large bowl, combine dry ingredients: cornmeal, flour, shredded coconut, stevia, & baking powder.
In separate bowl, whisk wet ingredients: eggs, sea salt, coconut milk, cream cheese, & butter Stir dry ingredients into bowl with mixed wet ingredients until everything is moistened .
Pour into a greased baking pain Bake for 20 minutes.
Sprinkle a pinch of sea salt over the cooked cornbread and allow to cool down.
