Chicken & Chickpea Shakshuka

Ingredients

• ¼ cup olive oil

• ¼ onion diced

• 1 pound of ground chicken

• 2 cloves garlic (minced)

• 1 can tomato puree

• 2 tablespoons tomato paste • ½ cup fresh cilantro diced

• 1 tablespoon parsley

• 2 teaspoons Mediterranean sea salt

• 2 tablespoons cayenne pepper

• ½ teaspoon cinnamon

• 2 teaspoons chili powder

• 1 teaspoon cumin

• 1 pinch cardamom

• 1 tablespoon paprika

• 1 can chick peas

• ½ lemon

• 1 red bell pepper

Prep Time:5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Directions

• Marinade chicken using 1 tablespoon of olive oil, fresh cilantro, parsley, cayenne pepper, and pinch of sea salt.

• Brown ground chicken and set aside

• Over medium heat – sautee garlic, onion, olive oil, bell pepper, & cardamom with cumin, cinnamon, paprika, and a pinch Mediterranean sea salt

• Stir in tomato paste and tomato puree and allow to simmer.

• Add chickpeas and chicken – mix evenly.

• Add chili powder and additional sea salt

• Squeeze lemon into the mixture.

• Mix evenly.

• Reduce heat to medium-low and allow to cook for 15-20 minutes.

Note: We served this with brown rice for dinner and the following day enjoyed it with toasted sour dough bread.
