Note:  This recipe is so versatile.  You can use any veggies that you would like to mix in and you can add any meat that you would like.  We normally add shredded chicken and one or two scrambled eggs! J

 

Ingredients

1 Spaghetti Squash

1 cup of diced green cabbage

½ cup of diced zucchini

½ cup diced onions

½ cup diced mushrooms

½ cup diced carrots

1 tbsp minced or diced garlic

Coconut Aminos or Soy Sauce to taste

Salt and Pepper to Taste

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes


Directions
 

Cook Spaghetti Squash in whatever method you wish.  I cut mine width wise and cooked in Instant Pot for 20 mins.  You can bake as well for 40-45 mins face down.

Sauté all veggies in a sauté pan with the garlic and a little avocado or olive oil.

Once veggies have softened a bit add in cooked spaghetti squash and stir together until everything is mixed well.

Next add coconut aminos or soy sauce to the flavor you like and salt and pepper to taste.

You can let simmer on low for 3 mins or so and then Enjoy!

 

You can have this as a main course or enjoy with cauliflower-fried rice and you’re other Chinese food favorites!

 

This recipe is Gluten Free, Dairy Free, Nut Free, and Soy Free (as long as you use Coconut Aminos).
